Now that fall and the rainy season are here, nothing tastes better for dinner than a hearty cup of soup! I have been hunting down the best soup recipes to try at least once a week. A few weeks ago, I made this delicious Zuppa Toscana recipe by Spend with Pennies. It is a copycat recipe of Olive Garden's version (but tastes way better!) and it was to die for!
Last night, I made Split Pea Soup because I had some leftover ham from the weekend. And when I say ham I literally just mean sandwich meat. You can use any old ham you want for this recipe- whatever you have laying around. I used a mixture of ham and Costco bacon crumbles. It was perfect!
Split Pea Soup
1 lb Split Peas
1/3 Cup Onion
2 Tsp Minced Garlic
1 1/2 Cups Ham/Bacon
6 Cups Water
2 Bouillon Cubes
Tsp Parsley
1 Bay Leaf
Salt & Pepper to Taste
Add all ingredients to the crock pot in the order listed above.
Cook on low for 8-10 hours
Cook on low for 8-10 hours
Serve with Dutch Crunch or French Bread
*Note: 2 Cups of water and Bouillon cubes may be substituted for 2 Cups of Chicken Broth
